Pheasant dish for SpringFound a couple of skinless pheasants in the freezer that need using up - I've got some pancetta, onions, leeks, peas and usual store cupboard stuff - Any ideas for a decent meal for 4 without buying tons of extra's ?
Thinking at the moment some sort of risotto dish but OH isn't that keen on risotto

You could fry the breasts in double cream with the pancetta, onions, leeks and garlic. It'll make a lovely sauce, and of course peas as a side dish

Remove the legs and breasts, then make a lovely rich reduced stock with the carcases.
Braise the legs in the stock, remove, cool, skin and mince. Blend the meat with some clarified butter, season and serve on toast as potted pheasant. Reserve the stock for the next step.
Stuff the breasts with a nice oniony/herby/breadcrumby mixture, wrap in pancetta and fry. Deglaze the pan with red wine / sloe gin / alcohol of choice, then add remaining stock and reduce hard. Serve on a bed of braised peas and leeks with your starch of choice.

Pheasant casserole or pot roast with the onions and leeks, and any lentils you might have in the cupboard, or carrots, or whatever. With peas as a veg, and spuds/couscous/rice or whatever carbs you have in the storecupboard.
Or pheasant curry with rice and peas.

Oooh lots of lovely ideas - Might go with Judiths potted pheasant for my lunch tomorrow but save the stock for another time as we've already got some stock made in the freezer - Would save time tonight - I think pheasant curry or stuffed pheasant breast is likely at this stage
