Pheasant livers

I'm thinking paté? Onion, splash of spirit (I think I have amaretto or fruit-based alcohol, any advice?).... Can I chuck in the hearts too?

The hearts are going to make pate a bit chewy. You'd be better confiting them and the gizzards I reckon.

i tend to clean em completely but mine are usually either blunt force trauma or retrieved from mis shot

and pate isnt one of my favorite things Wink
