Got you... Pickled Eggs

NO DONT GO!....

Anyone got a decent recipe?

Anything bought is just battery hen eggs i'm (99%) sure..

Google has recipes but i'd love a tried and tested one from here!

Please help, They go so well with a pie (veggie for me - the rest of you can choose your own), pickled chilli , and a drink so well!

I'll be watching this thread with interest, all our hens have come back into lay now and I'd like to preserve some eggs, never made pickled eggs before. Smile

Not tried this one, but it's in a book i just bought...

18 eggs
1 tbsp salt
1 litre white wine vinegar
1 tbsp white peppercorns
1 tbsp chopped ginger
1 tsp allspice berries
1 bay leaf

Hard boil the eggs, rinse in cold water and peel. Put in a big jar.

Warm the vinegar with the crushed peppercorns, ginger, allspice, bay leaf and salt. Simmer 10 mins and cool.

Strain and pour over eggs, to cover.

Seal the jar and leave in a cool dark place for a month.

Thats very similar to the recipe I've used for years except mine also adds in a few red or green chillis for a bit of a kick

I usually do some with chilli and some without especially if they are for presents.

Hubbie adores pickled eggs and says that it makes a really tasty egg puke_l - personally I can't stand 'em

They do seem to be an acquired taste i admit! I'd never tried one until last year as the idea itself seemed pretty revolting - I was surprised when i did though.

Thanks for the recipe, i'll give it a go!
