Pork and beansJust had my best ever pork and bean stew. It's a lesson in taking the time, no recipe to it, just accumulated experience.
It was started 48 hours ago with brining a pork joint (well half a joint) the beans had a spell in the pressure cooker.
The pork was diced, velveted and browned in batches, a tin of tomatoes a non generous amount of onion, paprika, pepper and mixed herbs and a stock cube. Plus a splash of red wine vinegar and a couple of tablespoons of dark sugar.
A very long slow cook, then this morning added some steamed carrot and all reheated slowly for dinner. quite a lot of steps, but really not a lot of work and the steps really make a difference.
Pork and beans is kind of hard to get wrong, but also hard to get seriously right!
We did not pad this out with any sides so cost wise I am estimating a little over £2 a head and again it's that high because we were pretty much 50/50 pork to beans.

Have never tried that but do make a cassoulet that contains bacon, chicken and beans. That is a seriously good dish that usually ends up being simmered on top of the fire in the winter. Must have a go at another one some time as there are no more packs of it in the freezer.
