Pork mince inspiration needed

Just fished a lb pack of Rob's excellent pork mince out of the freezer for tonights dinner. Am failing in inspiration though.

I do have a few shallots, some red chillis and a lime that could do with using up, so possibly something spicy, but am open to suggestions. Got the usual things like onions, tomatoes, potatoes, rice etc in, plus most known spices.

I could give you the recipe for Teddy's pork balls...but then I'd have to kill you!! Twisted Evil


Seriously you have most of the ingredients...just mix them up with the minces, fry off the balls in sweet chili sauce and serve with rice or soft noodles!! Very Happy Very Happy Very Happy Very Happy

hmm yes, vaguely oriental style pork balls on rice noodles might do the trick, could do a bit of a composite of recipes to fit the ingredients, and there are some good starting points there

got any fresh coriander?

lime zest and juice, fresh coriander, chill and a bit of ginger in a blender

soften onions/peppers/carrots
add mixture
add mince
cook

mix with bulgar wheat and salad leaves

Soften the shallots in a little oil for five minutes and then add the chopped chillies. Stir for a couple of minutes and then add the pork mince. When it is cooked stir in some chopped coriander and squeeze over some lime juice. Spoon into iceberg leaves, roll up and crunch away.
