Preserving eggs.We've only got 3 hens so far and already SWMBO is talking of preserving eggs for the lean winter months
We can think of pickling, making into mayonaise etc but what, if any, other methods are there of preserving eggs?

Freeze 'em. Beat them up two or four at a time, tie them in a plastic bag and stick them in the freezer. I've just started doing it.

freeze some yolks and whites separate for baking/meringues etc
think some peopleuse the plastic egg type thingies from kinder eggs to freeze individual eggs/yolks in but not tried that myself!
someone could do with inventing some kind of tupperware thing you can freeze a single egg in.

Ssssh. When we picked the cockrel up from Tavascarrow he had a load of chicks in an incubator.....you can guess her reaction

So, can I just defrost them later and use them like fresh eggs to make a sponge cake?

Yes, as long as you label them as to how many there are.....
What about lemon (or other fruit) curd? That freezes well.

Wow! That's great - it's always 'all or nothing' with my hens and I'm currently finding it hard to put aside the time to bake them up into something for the freezer. Thanks for that tip

These little boxes are very useful for small quantities of stuff . For freezing individual eggs something like this might be useful - you could pop the eggs out of the cups once they are frozen and store them in a plastic bag.

How long do frozen eggs keep for? Can I start freezing now while I have a glut or will they be 'orrible by December time? I except I need to time it just before they start to go off lay. Although thinking about it mine quite probably won't all stop this winter.

Anyone have an answer to GZ's question about non freezing ways of preserving eggs (apart from pickling which I presume we all know about) How for example does one make powdered eggs?Does anyone use them this way?

Powdered eggs are made by spray drying. Not a technique for home use.

When I've got a glut I tend to make things with them and then preserve them, rather than freezing the eggs as they are. In the summer when I tend to get a glut of cherry tomatoes at the same time as the egg mountain I make lots of cheese and tomato quiches for the freezer. You can freeze cakes as well (they are never quite as good as fresh made, but better than no cake at all). Scoth eggs also seem to freeze reasonably well. I've not tried it but you could make up batches of shortcrust pastry (I tend to use egg in the sweet pastry I make) and freeze those.

I have a glut of egg whites having just made custard for ice cream from loads of 10p pint double cream
do I need to part whip the whites to freeze them or just freeze as they are ( I thought two per pot in a silicone muffin tray might work??)

I stir mine up a bit with a fork. Seems to work.
Slim - thanks for that article. I must have missed it before. I remember my parents preserving them in water glass when I was a kid.
