Preserving Parasol MushroomsDo these dry sucessfully? There's loads of them locally at the mo, far more than I can eat. I'm trying to sun dry them on a baking tray just now (still hot here!), but they're going spongyy rather than drying IYKWIM. Is there a better way to do it?
Sorry if this has been asked before. There were so many results when I searched on 'parasol mushrooms' .....

Parasols dry well. Slice thin and dry is good; have a look here:

I found some a couple of weeks ago & did exactly what Cab suggested & it has worked fine. Just wish I could find more...

Thanks Cab! I've brought them in & sliced them a bit thinner now, & they're enjoying the last of the heat from the oven overnight before I put them back out in the morning. They've gone a bit sort of crispy on the outside. I'll string tomorrow's batch I think, & peg the string to the washing line as I do courgettes.
The egg & breadcrumbs tip sounds a good one. I haven't got a freezer, but it least it's another way to eat them straight away.
