Pumpkin Curd - anyone got a recipe?Has anyone got a recipe for this? There was one in The Organic Gardening Magazine a few years back but due to masive loft reorganisation I am unable to find the right magazine. I remember it having no eggs in it though and it tasted yummy. Googling has been so help

Never heard of it. Put it's worth keeping the thread bumped for a day or two.

I made it last year and it was lovely but I have no idea where I have put the magazine containing the recipe

Not sure if this'll help or confuse the matter. I think pumpkin curd must be what we Americans call pumpkin butter. This might not be the best recipe, but might give you a place to start, if you think it looks familiar:

Both those recipes sound nice - Alice, it wasn't that one as I remember it having no eggs in. BethinPA - that may well be it but I can't remember it having spices in.
In any case I may well give both a try sometime. Thank you both. I'm just so cross I can't find the magazine .

I can't imagine pumpkin without spices (cinnamon, cloves, nutmeg, ginger)! If it doesn't quite have the flavor you're looking for, a little lemon juice can brighten it up, too.
Good luck!

We've had some rather good pumpkin risottos recently - with plenty of chilli and garlic.
