quince apple and orange marmaladeI found this recipe on a visit to a tea garden in Northamptonshire: the owner wasn't very forthcoming with the recipe so I bought a jar and experimented until I got a similar result!
1 kilo of quinces
1 kilo of apples (windfalls, eating or cooking will do)
juice of 2 oranges
about 1 kilo of sugar
Peel and slice quinces and apples, and cook gently in the orange juice until tender. weigh the fruit and add an equal amount of sugar. Cook until a small amount on a cold saucer wrinkles when pushed.
Pour into hot jars and cover.
