Recipe for Kendall mint cake wantedHi Everyone.
Does anyone have a recipe for Kendall mint cake I could have please?

Not a recipie as such, more a general method.
Take a lot of sugar and some liquid glucose.
Plonk in a pan with a tiny bit of water and heat gently.
Add peppermint oil to suit.
Once it's amagamated, pour out into a pan and thin out.
Bake in a very low (drying) oven until hard.

Kendal Mint cake
1 lb sugar (white or brown)
1/2 pink milk
1/2 - 1 teaspoon peppermint essence or a few drops peppermint oil
Dissolve the sugar in milk in a heavy pan over a low heat. Bring to the boil, stiring constantly and cook untill a little of the mixture dropped into cold water forms a soft ball between finger and thumb (237f/114c on sugar thermonmeter) Remove from heat, beat mixture for 2 minutes and return to heat and boil again until mixture forms a firm ball (247f/119c). Remove from the heat, add flavourings and stir untill thick. Pour into an oiled shallow tin and mark into bars. Cut when cool
