Rendering fat question

We had a visit from the fox yesterday Mad and have spent today plucking seven birds, not what I had planned. They are Sasso's and have put on quite a bit of fat and I have a bowl full in the kitchen. What can I do with it? No fridge.... was thinking of trying to do a chicken confit?

And a bowl of livers too, can only think of chicken liver pate.....

If you render the fat and put it into sterile jars it'll keep pretty much indefinitely.
You could use a bit of it to seal the top of your chicken liver pate as well.

Use half to make paté and seal it with your rendered fat, so it keeps a bit longer. Use the other half to make devilled chicken livers on toast. Yummy.

Margueritte Patten recommends chicken fat for cake making---no unpleasant taste if it's well clarified.
p.s. Sorry about the fox Sad
