revisiting old favourites

After posting that Chicken Cobbler recipe on the casseroles thread it reminded me that sometimes its good to revisit old - even very old favourite recipes and see if they are still as good or can be re worked somehow.

With a sack of spuds in store I'm keen to use my potatoes so we've been having cheese and potato pie - remember that! But I've found it is vastly improved by frying off a finely sliced onion and a finely chopped medium chilli in a little oil until the onion is caramellised. Then once the potato is mashed and the cheese beaten in I stir in the onion and chilli mix including the infused oil. Then it gets popped in the oven to crisp the top. The onion adds a little texture and flavour and the chilli a wonderful warming effect without being overtly hot. A true comfort food.

does sound lovely, unfortunately cheese is one of those migrane triggers my OH chooses not to risk so I don't get it very often!

Talking of potatos.

Potato and onion pancakes are brill. Just coarse grate the potato and onion, make small patties and pop in fry pan with olive oil.

That could be spiced up with some finely sliced chiles Very Happy

That's one of my favourite things to do when I have no imagination and I need to go shopping. I stew up a couple of apples to make apple sauce to serve along with it.

that sounds nice!

I have an old recipe somewhere for making up a batter that you added that sort of thing to ( or left over meat or other veggies) and then you dropped spoonfuls to fry off in a pan abit like savoury drop scones.
