Rowan

There are masses of Rowan this year, they feel early bq well. I will pick a couple of bags and chuck them in the freezer ready for jam and jelly when everything else is ready. Freezing everything first seems to get the juice out quicker.

still a bit early I would think. Freezing breaks down the cell walls and reduces pectin levels. On the other hand we were always told to pick them after the first frost as it improved the flavour....
Also if we wait too long the birds will have them all!!
Wonder how the different coloured ones would compare in taste of finished jelly?

I usually just bung a load in a hedgerow jam with no recipe more than make specific Rowanjelly. The first frost is me freezing them. Not sure how that works.

Are they edible in jam, B66 ?
I've only ever used them for jelly and wine.

Half and half [crab] apple and rowan jelly is good
Also 2:1 rowan:apple jelly

They don;t set that well on their own, so need apple or lemon juice to assist.

They go in with haws, rose hips, elderberry, blackberry, and anything else I can find to make an interesting but pleasant jam. It sets fine but that is probably another influence.
