saffron "jus" for fish2 portions
pinch saffron
pinch big grain sea salt
pinch black mustard
5 black pepper corns
grind in a mortar
add tsp olive oil
grind in a mortar
grind again
add i tsp chablis in 1/4 portions while grinding vigorously
rest , grind , grind again now and again for a couple of hours . it does need a few hours to develop into yum.
ps if it separates it gets even prettier
concentrate on getting the fish perfect as the "smear on the plate" will be
