We have samphire here, it's one of my favourites too.
I've been eyeing the mustard pods dpack, but all the ones I've tried seem pleasant enough but a bit woody. I had pinches of fresh elderflowers to nibble* while I was out walking in the rain the other day. Light and slightly perfumed, they were really good.
*Petals only, no green stuff.

The estuary down the road has Samphire. How can you preserve it in kilner jars? Is it doable?
