Scrambled egg curry

This is usually a breakfast curry but is cheap, quick and easy so useful for any time of day, traditionally eaten with paratha or chappatti but just as tasty in a roll or toast, or our favourite which is with jacket potato. You can use pretty mucvh any veg in this depending on what's to hand, the only essential really is some sort of alium. We find 3 eggs between the two of us is sufficient.

Some of my favourite versions:

Leek
1 medium leek sliced finely
any veg oil
salt & chilli (fresh or ground) to taste
3 eggs
optional:
1 tsp garam masala

Sweat the leeks in the oil until translucent.
Add salt and chilli, incorporate.
Add garam masala if using, incorporate
Add eggs, give it a few stirs till it's cooked

Pea & spring onion
1 bunch of spring onions sliced finely
A good handful of shelled peas
any veg oil
salt & chilli (fresh or ground) to taste
3 eggs
optional:
1 tsp garam masala

Sweat the onions in the oil until translucent.
Add peas, cook to taste
Add salt and chilli, incorporate.
Add garam masala if using, incorporate
Add eggs, give it a few stirs till it's cooked

Garlic and red pepper
Half a bulb of garlic sliced finely
1 red pepper diced
any veg oil
salt & chilli (fresh or ground) to taste
3 eggs
optional:
1 tsp garam masala

Sweat the garlic in the oil until translucent.
Add pepper, cook to taste
Add salt and chilli, incorporate.
Add garam masala if using, incorporate
Add eggs, give it a few stirs till it's cooked

Yup. Forgot to say another optional extra is some chopped coriander right at the end.

I can't over emphasise how easy and flexible this is, all time fave. You can change the texture/taste completely by how much you cook the onions, dad likes it when the onions have just started to go translucent, mum likes it when the onions are brown mush.
