You can use sea beet in any recipes you would normally use spinach. I have made sea beet lasagne, sea beet gnocchi and blanched it to have as a side dish. I love the stuff. Have fun experimenting!

Very Happy It is excellent stuff! Try it for everything Mina's suggested, as well as sea beet & brie pasta sauce (sticky, gloopy and delicious). It also works very well in one of these:

Sea beet and mushroom pie.

very nice anyone know if you can eat the root???

hay what about pasta

Yup. Anything you would want to do with spinach you can use sea beet for.

I'm sure you could eat the root as it's a relative of beetroot/sugar beet/mangold etc., but to be honest it's likely to be pretty woody and I wonder if it'd be worth it.

'Course, if you do decide to do an experiment with it, let us know how you get on. Laughing

Yes, but you can't go around uprooting wild plants of course.

Its root is variable, but if you get it before the plant flowers then its quite sweet, rather like beetroot (as you might expect). Got to get it young or its woody.

But unless its from private land and you have permission, you can't legally uproot whole plants.

Yep, although its really more akin to chard than to spinach.

I have eaten the root and it is OK as long as it is early in the year. It looks like white beetroot inside, complete with the concentric rings and tastes faintly of beetroot too.

The law about digging things up pretty well puts paid to the root as a delicacy but you aren't missing much!
