Self seeded courgettes inedibly bitter

We must have chucked some courgettes to the pigs last year as where they were is a small patch of self seeded courgettes. They're fruiting beautifully but I fried some the other day and we had to throw the meal away. they were so bitter as to be inedible. What's that about?

Cucurbits are promiscuous and will readily hybridise with others, there may have been some other plant that pollinated the fruit OR your courgettes may have been an F1 variety which wouldn't breed true anyway.

There is a trick that will help with bitter courgettes. Slice em up, then liberally salt them and allow to stand for several hours before rinsing well and cooking. Often works wonders. However, as Tahir says, they may just be a 'bad' strain compared to the original

It's a pain as the self seeded ones are doing better than the planted ones as we were a bit late with everything.
