Selling home made preserves. Are there any rules/regulations for selling home-made preserves?
We will have far too much fruit for everyones use at the walled garden, and I thought that I could make jams etc to sell, any profits towards the rent!

Where do you want to sell them ?
In Scotland, I had to
1. register as a food premises with Environmental Health/Trading Standards [fill in a form, no charge to register]
2. Have production/cooking areas inspected by EH, and discuss production / storage methods and food hygiene issues arising
3. Discuss labelling requirements to comply with legislation
4. Be visited by Trading Standards to ensure that goods weighed what they said they did on the label.
5. Discuss website trading with on-line shop [though that has not actually happened yet]
I found both EH and TS very helpful, and mostly sensitive to the small scale of operations [i.e. cottage industry].
BTW, that was to sell at Farmers Markets, on the web, and through local retailers

Only selling them on the surplus veg stall at Dillington house, and perhaps our allotment stall. Our local markets are over subscribed, and I don,t want to upset the other traders whoare selling for their lively-hood.

You could get in touch with EH/TS anyway, just to check what you need to do [if anything].
Or treat it like a 'sale of work' / fundraising coffee morning, which does not require owt. Though those are usually only once or twice a year.
