Do you just add some to the bottle? If so, how many?
Vanilla Ice-cream, does anyone have a good recipe (and damn, meant to get cream while I was out).
How long after putting the vanilla in the sugar before it's good to use as vanilla sugar?

Make your own vanilla extract for use in cakes etc-
Scrape the seeds out of two or three pods, chop the rest of the pod up finely. Place the lot in a clean jamjar and top up with the strongest spirit you can get hold of. Rum or brandy add a nice flavour, vodka is fine.
Leave to tincture in a warm, dark place, well, forever, decant a bit off into a small bottle as you need to. Gets stronger the longer you leave it. Some people filter, never seen the need myself

Spiced Rum
1 litre light or golden rum (not dark rum, or white rum)
1 vanilla bean
1 tsp ground allspice
pinch aniseed, crushed lightly
3 cinnamon sticks
1 whole nutmeg, ground
6 whole cloves, crushed lightly
3 star anise, crushed lightly
a small grind of black pepper
Slit vanilla bean open and scrape pulp into large kilner jar. Add rum and other spices. Steep for 2 weeks. Strain and bottle.
makes something akin to Morgans spiced rum

I make a vanilla vodka type thing, 2 pods in a litre of vodka then put into a cupboard for a year then find a clean 1 liter bottle and split the vodka in two and half fill the bottle and put 1 pod in each, make sugar syrup by bringing 500g sugar and 1 liter of water to the boil and let cool then top up both bottles to 1 liter, that makes 1 liter of vodka into 2 liter bottle of vanilla liqure for presents and its still a respectable 20% abv

a lovely variation on the all in one sponge
make up your sponge as usual but use light muscavardo sugar rather than caster, add the scraped seeds from 2 pods
bake as usual
once finished heat up golden syrup till liquid and pour over sponge (you could always add the scraped pods and remove when finished for extra vanillary flavour)
makes a lovely hot or cold sponge cake

Golly - even with expensive vanilla pods and vodka this is still a lot cheaper than buying even nasty vanilla stuff...

This is the recipe for vanilla icecream that came with my ice cream machine. I have to say it was such a wonderful flavourful vanilla ice cream. Nothing like the store bought at all.

I wonder if you could leave the pods in the tin, like with sugar? I can see I am going to have to order more vanillia pods!

I'm making a variation of creme brulee, in that it's spooned into wine glasses and topped with raspberries and then sweetened cream.
Unfortunately one of the wine glasses just fell out of the fridge, what a mess.

Nope, only had enough cream for two glasses at it was mine that fell out. Still got the cream and raspberries.

Can I not just chop te whole pod finely or is there some special flavour reason? Just asking as lazy...

no reason beyond making sure that as much vanilla is in contact with the alcohol as possible, chopping it all up finely should work just as well.
