Soup of the Day?I'm guessing that a fair few people will be planning a batch of soup in the next few days, the weather seems to be lending itself to it as does all the mild lurgies that seem to have descended with half term.
What sort will you be making next?
I think that today I will be going for a spicy mix of butternut squash, carrot, onion, lentil and possibly some apple.

I have a variety of squashes in storage at the moment, so it could be curried squash soup. Otherwise it'll be beetroot as I've still got loads in the ground that needs using up soon.

Pumpkin- my beloved has presented me with a large pumpkin
I've already grown four medium sized ones
It will take less room in the (nearly full) freezer as soup

Picked up a HUGE bag of portabello mushrooms that were being sold off very cheaply yesterday---so they'll freeze as soup--still got some leek in the fridge to eat up.

Had duck noodle last night (yum), but there is still loads of duck stock left. So something like mixed veg and barley, possibly with some beans in there as well.

We naughtily went out for dinner last night.
I had an excellent French onion soup and will definitely be making some this week. Amazing how the simple things can taste so delicious!

Something goulash like, paprika, garlic, tomatoes, beef etc.

We tend to operate the magic stone principle; it'll take nice as it is but better the more you add. Recently, along with the basics of a veggie soup, I've been adding some beetroot and our own home grown beans. The runner bean seeds were particularly good. Also squash, some dried shrooms, red peppers, plenty of herbs including celery leaf.

Good old chunky Leek and Potato with fresh sage and white pepper.

Our own chicken broth, with carrots, lentils & barley. (our birds & carrots)
Our own pumpkin, parsnip soup, and butternut & sweet potato withonion (blended smooth.).
LOVE homemade soup - big batch & freeze.

Curried jerusalem artichoke and potato. We only have nettle and bacon soup left in the freezer, so about time we made some more. Have plenty of carrots left too, so might try something carrot based as well.

I made carrot (with ginger, coriander and cardamom) last week, but I think this week it'll be green minestrone. I'm saving a parmesan rind to plunk into it.
