syllabub

Made a lovely syllabub on the weekend, from nigella bites based on a recipe from Jane Grigsons english food

It was 1pt double cream, 12 tbsps contrieux, the juice of a lemon 8 tbsps of sugar (I used sugar scented with rose petals), 2tbsps each of rose and orange flower water

It was made by disolving the sugar in the contrieux and lemon juice, adding the cream and whisking till its starting to thicken, then adding the rose and orange flower water and whisking till its holding shape

I served it with pistachio biscuits and a rose sponge.

It was very nice

I am pondering do it again but the for the next audience I can't really put alcohol in so I was wondering if anyone had any suggestions for how to do it without

Currently I had been pondering the juice of an orange as well as a lemon, an extra tbsp of rose and orange flower water and possible something like ground ginger or cinnamon

what do people think?
