Tomato & Chilli Chutney..

Anyone got a recipe? Thank you in advance.

From Oded Schwartz (it is just called tomato chutney but does have a reasonable amount of chilli in - you could always add more)

3tbsp groundnut oil
300g onions chopped
1 head garlic peeled and chopped
90g ginger root
2-3 red chillis (recipe says deseed and cut into thick strips)
1kg tomatos skinned, deseeded and chopped
125g soft brown sugar (or jaggery)
250ml red wine vinegar
6 cardamom pods
90g basil or mint

Heat oil, add onions, garlic, ginger and chillies. Fry 5minutes, add toms cook for 15 minutes or untill soft.

Add sugar, vinegar. Simmer for 30 minutes untill thich and liquid evaporated. Remove from heat.

Grind cardamom in spice mill/grinder. Add to chutney through sieve. Stir in basil or mint. Ladle into jars.

I have to admit I've not tried it but I have full faith in the recipes in his book!

Thanks for that, I will try it during the week, It's not unlike the one I do for the beetroot.
