Tomato chutney questions

Is it OK use some green and some partly ripe tomatoes? Can I use cider vinegar instead of malt? Is it OK to use a large saucepan and half or third quantities of ingredients as I haven't got a preserving pan?

Yes
Dunno. Probably.
Yes. My 'preserving pan' is just a large stockpot, so a large saucepan with a thick base would be fine. Half quantities maybe (I think 1/3 might be too little)

Thanks gil. I've never had such a big crop of tomatoes and I'm actually getting a tiny bit tired of tomatoes with everything Shocked . Thought it would be fun to have my first ever go at making chutney... Hadn't thought of using the big stock pot - I wonder where it is???

Yes.

I've done so many times with no ill effects; add a little more though, seems to work better, gets it good and sharp and appley.
