Tomato Ketchup recipe please!

Hello! I have a LOT of tomatoes in the fridge at the moment and if I don't do something with them soon they shall all go off. I eat tons of ketchup so I was wondering if any of you have any tried and tested recipes for home made tomato ketchup? Thank you!

I've made it once or twice myself - keep looking at the tom's in the greenhouse hoping that I'll have enough to make some this year

We make this one from Readers Digest "Food from your garden'.
We even used green tomatoes last year (lack of ripe tomatoes) and it still made a fab ketchup!

4 lb ripe tomatoes (sliced)
1 large onion (peel and chop)
2 large apples (peel and chop)
2 teaspoons pickling spices
3/4 pint vinegar
large pinch of cayenne or paprika
6 oz sugar

Boil pickling spices in the vinegar for 10 mins and strain.
Cook apples, onion, tomatoes to a thick pulp, stirring frequently.
Sieve the pulp and simmer gently with the vingar, cayenne and sugar until thick and creamy. Add salt to taste.
Pot at once in hot bottles and seal.*

*Rather than this we freeze it. It freezes well so we have some 'on the go' in a squeezy bottle and just defrost and rebottle when more is needed.

Also hope we'll get enough tomatoes to make some ketchup. We've run out and we're not going to buy any. Trust me you'll never use shop bought again!

Thanks for that! But what are "pickling spices"? Can I substitute anything else?

I think it is normally a mix of coriander, mustard seeds and pepper or summat like that. But definitely, go with what you fancy. Allspice is nice.

Er...quickly check the box...it is called 'pickling spice' and we seem to have a range from branded to supermarket.

Judith is correct, reading from my box it has - coriander seed, yellow mustard seed, dried chillies, allspice, ginger, black peppercorns and bay leaves.

Thanks for that! So I shall just use a bit of each of those. I wonder if it would be worth me buying a packet as I have some walnuts that need picklinkg. I shall check on the recipe when I get home and see if that requires pickling spices too and if it does I might just go out and buy myself a little packet.
