Tried and tested blackberry cordial recipe?Google throws up a million and one variations, and I want an easy, non-jellifying recipe for blackberry cordial that isn't going to take me 5 iterations to get right.
I fought off all the other blackerry hunters today to get another couple of pounds, and the freezer is beginning to look like the store of a fruit-fetishist despite last night's jam fest, so I thought I'd make this next...

We've been slowly building up a pile in the freezer too. Ear-marked for jelly and wine.
However last year (or the year before?) I made blackcurrant cordial. I just boiled it up with a bit of water and some apples, slung in some sugar, ran it through a jelly bag and boiled it down a bit till it tasted right.
Worked fine. I put it into old litre plastic milk containers so I could keep the un-opened ones in the freezer.

Thank you! That looks a lot less complicated than all the ones that seem to involve esoteric ingredients like vinegar (in cordial?)

we made blackberry and apple cordial last night - same idea really boil, strain, add sugar, bottle. ncie. can do proportions if you want

blackberry and apple cordial1 kg apples (windfalls are fine, just cut off the manky bits before weighing)
1 kg blackberries
700ml water
sugar
Chop the apples - no need to peel or core. Put in a large pan with the blackberries and water and cook for 30-45 minutes, until its all mushy.
Strain using a jellybag overnight.
Measure the resulting juice and add 700g of sugar to each litre of juice.
Bring to the boil just, stirring the sugar to dissolve ( you don't want to cook this a long time or the pectin present might result in jelly rather than cordial!)
Bottle in sterilised bottles. Keep in the fridge and drink within a couple of weeks, or to keep longer, freeze.

Just been making a blackberry syrup this afternoon. We went blackberry picking and didn't really have much success, (plus a fair number of those the Sherbling picked were less than ideal ) so it wasn't much good for actually eating.
Boiled them up, strained them, reduced the liquid down a bit, added demarara sugar, boiled some more, cooled and bottled.
The Sherbling had some on ice-cream for tea

Don't worry it will still taste good, and work as cordial - might just take a bit of mixing up.

or make blackberry ripple icecream... thats what we did when it happened to us last year..

Ooooh ice cream!
I have already had some in a cup of hot water instead of tea, it was yummy. Luckily it's still runny enough to 'pour' from the bottle, and can be used as cordial with a bit of stirring.
And there's plenty more berries on the bushes waiting for me to have a second attempt!
