I happened to read something about this recently. Apparently turkeys go broody easily, so they tend to sit on the few eggs that they lay. Given that they only lay about 100 eggs per year, and the fact that they are large birds and take up a lot of room, it isn't commercially viable to 'produce' turkey eggs for shops.
