Turnip and apple salad

Get some nice, sweet young turnips, and some tart apples (all I've got at the moment, what with them not being ripe yet Smile )

Peel and cut the apples up into a bowl, squeeze with lemon juice, a good hefty slug of it. Peel and cut up the turnips, you want similar amounts of each.

Get the old mooli grater out, or grater of your choice, but I like the finish from the mooli for this one. Grate both the apple and turnip, mix them together, add a dash of olive oil and a pinch of salt. Chop some parsley and mix that in. Fridge it for half an hour, to let the lemon and parsley infuse for a while. Mix again before you serve, and garnish it with something because its just a bit too white (I used borage flowers).

A lovely, simple side salad dish.

I often make it with carrots and apples, and serve with fish cakes. Yours should be excellent with fish cakes, or fried fish, too.

Its got a sweet-sharp, mustardy-turnip flavour, which was really very intense when I'd first made it, which I should imagine would be quite excellent with herring or mackerel.

Do you think windfalls would work? Got loads at the mo.

Probably. So long as when you taste one they're not so tart they pull your gums back, and so long as the turnips are sweet.
