unripe pear windfalls

We have about 15 undersized hard green pears that have fallen off the tree. Not sure why, it's been breezy but apart from that there's no obvious reason.

Anyway, can i pickle/salt/cook them or just chuck them in the compost.

Peel them. 2 cups of sugar to 1 litre of water plus 300ml white wine vinegar, a split vanilla pod, 3 or 4 star anise. Boil up mixture, add the pears and simmer for roughly 40 minutes or until a knife passes easily into a pear. These can be kept in the fridge for a couple of weeks. I normally eat them with yoghurt.

my vote is for poach in red wine, sugar ,mixed spice. cool and serve with ice cream etc.

ferment and distil is possible but the flavour is "unusual" and unless you have "unusual" tastes the product is a pretty good glasses cleaning fluid or trangia fuel Laughing
