Using under-ripe windfall apples

I've had a few drop off the tree due to winds. They are nowhere near ripe. Is there anything I can do with them?

Bake with sugar?

core, slice of bottom to make a flat bit then fill core with brown sugar.

Bake a bread. Wheat, oates, apples make a great bread.

would it be worth cooking them down to use as pectin or whatever it's called - you know - setting agent for jellies and jams etc.

Peel and stew, and add blackberries....... needs sugar to be edible....

Takes ages, as they are so fiddly.
