What do rats eat? What would rats eat if there are no people around? It's kind of expected that they eat the waste we throw out but what's their natural diet?

They eat pretty much anything don't they? Up to and including each other. That's why they're so successful. They're neophobic though.

I think the rat population is pretty well linked to that of humans. We're symbiotic. If humans suddenly dropped dead the rats population would explode while they feast on our bodies but then fall back to low levels, lower than if we were around. They're natural scavengers and opportunists and will eat just about anything.

if the fast food stream ran out im sure there would be less but they are very adaptable and breed fast enough to exploit any food supply

Rats are probably the most important animal to our modern culture & yet we rarely eat them, readily passing over the plentiful supply of rat protein. BTW rat meat is not halal or kosher (is squirrel?).
Not sure about them being originally grain eaters, but they are omnivores & will eat pretty much the same things that humans eat, which is why they've developed such a close relationship with us.
