What do you make with Sorrel?

Got a lovely, large, healthy crop of sorrel in the garden but other than using a few leaves in salads, I've never really been sure what to make with it.

Does anyone have any nice recipes or meal ideas that use an awful lot of sorrel ? Smile

Never tried it, but I'm sure I've come across sorrel soup recipes.

It goes very nicely with all things eggy IMO, particularly in omelettes.
Also very good added to beany / lentil stews.

It makes a nice sauce for fish. Sweat it down in a bit of butter, add some white wine and let it mostly evaporate then add a glug of cream. This uses a surprising amount of sorrel because it wilts down even more than spinach does.

yup we do that (including the butter, but using creme fraiche) and then put in on a toasted muffin and a poached egg on top. nice.

Yep, we add leaves to curries, risottos (not pre-boiled) and the like.

Sorrel soup, sorrel sauce, sorrel in an omelette, as folk have said.
Wilted down in Spanish omelette.

I got so sick of my two rows of sorrel, I dug them both out in the end, and now I only use wild [sheeps] sorrel, in salads or omelette.

Before I did, I made sorrel wine, which used up 1.5lb of leaves.
It was OK, but I've never wanted to make it again Laughing

It's good in dishes like macaroni cheese; the peppery, slightly bitter taste cuts through nicely.

Sorrel is pretty cack in saag. More or less just disappears into anything its cooked in. A potato soup flavoured with sorrel is pretty special though.

Actually, I think theres a recipe somewhere (Ray Meares?) for a sort of sweet 'fruit tart' using sorrel.

There were a couple of sorrel recipes on the 'supersizers eat like the romans' thing the other day (its on iPlayer still)...
