What to do with Goose

Without going into details, I have 4 sides of goose breast, no skin or fat, what can I do with them.
I have thought of wrapping them in a pastry to protect the meat whilst roasting? any other ideas please.

Duck breasts are lovely in a thai red curry. Wonder if it would work with goose as well.
