The females are doing the quacking and the drakes the hissing.

I'd better go and tell some of mine they're doing it wrong ---'course they're Muscoveys who are already odd ---perhaps some are transgender as well

Muscovies are different! They only tend to quack if seriously distressed ... or if they stupidly get under your feet at feeding time and get trodden on!!!! Other than that, they hiss. Male muscovies tend to be bigger than females (from fairly early on), and develop the red lumpy bits around the bill earlier ... and when mature, the red lumpy bits are more pronounced. Any dark feathering tends to have a greeny "glint" to it, rather like a cockerel's plumage.

Yes--it was the bit about drakes hissing that made me laugh--go near my females when they've got ducklings or when they are falling out with each other and the hissing is incredible.
