Wild Garlic Soup
- 300g Wild Garlic
- 50g Arborio rice
- 50g butter
- 1 litre chicken stock
- 1 stick celery
- 1 onion
- 1 clove garlic
- Sauté onion and celery in butter. Add rice and stir. Add stock and cook out for 15mins.
- Now rice is soft fold in chopped up wild garlic until colour change.
- Blitz soup in liquidiser. Season with salt and pepper.
- Season with white pepper and sea salt.
