wild mushroom & pumpkin risottoHi had the above knocking around the kitchen, it made a fab risotto, hope you don't mind if I share it. It's only a basic recipe I know, but it was goooooood
Sweated a chopped onion, some ground black pepper, and a clove of garlic in a good knob of butter.
Added a paper bag full of mixed mushies sliced up (today's were wood blewits, field mushrooms, common puffballs and parasols) and 1/4 grated nutmeg
Then added 150g arborio rice and some small cubes of pumpkin and stirred 2 mins
Then added 1 pint boiling water, 2 tsp swiss veg bouillon, a sprig of thyme, a glug of white wine, and kept stirring 20 mins till liquid was almost absorbed
Added a good few parmesan shavings and stirred another 5 mins till melted and risotto was nice and thick and gooey.
Yum!

Was the pumpkin raw or cooked?

It was raw, it was the bits that I'd carved out of the halloween pumpkin!!!

I've got pumpkin overload. I've made soup but this risotto sounds yummy too

There's such a glut of wild shroomies that it makes sense....do you know if risotto freezes OK?
