I'm not sure if this should be here or in the poultry section. I am trying to separate yolk from white but the yolk is breaking rather easily. The eggs are about a day old, the hens have really just come back into lay. The eggs are quite cold, could this be doing it? Should I be concerned about the hens?

Annoying as I am now making apple cake instead of piles of meringue and creme brulee.

I wonder if all the plastic bottles are up at the lambing shed.

I think you might find things better if you used eggs that were a week old. Leave the eggs for a while before you use them.

Thanks Bodger.

Must remember to put out some grit as well, anything soluble will have definitely dissolved by now.
