Whats for dinner?
Im doin chicken thighs with Henry Westerns cider, it was a rabbit recipe but Ive done it with chicken mmmmmmm

Sausage curry to use up the sausages left over from the sausage and mash last night and there Is so much left it will be sausage biryani for tomorrow.

Well that was really nice

6 chicken thighs
2 onions
6 sticks celery
2 carrots
half cup chicken stock
250 mls henry westons cider
course ground black pepper
salt
olive oil

Brown the chicken and onions in a little oil, add stock carrots and celery, salt to taste and black pepper
add cider then simmer quite vigoruosly to reduce the cider,15 mins
10 mins in high oven to brown the tops of thighs
Eat with cob bread and polish off the cider.

Cider and celery as Jamie Oliver says best mates.
Chicken can be swapped with rabbit. Having done both think the chicken is better.

We had haddock (baked with smoked paprika, lemon zest & wine) served on top of roasted aubergine, mushrooms, tomatoes, red onion, red peppers & garlic. Once the veg were roasted, I stirred in some butter beans and a splash of olive oil and red wine vinegar. Was lovely
