its just a thick pancake batter really - if you can make ok pancakes with rice flour then it should work fine.


Buckwheat flour makes lovely pancakes and should be good for fritters.

cheesy baked eggs

Lemon curd and vanilla icecream, made with egg custard and cream, with pavlova and strawberries uses the most eggs deliciously.


Shame my OH has given up the statins

Mexican egg....
6 eggs
1 or 2 chillies
small piece of grated ginger
1 small red pepper
2 small shallots
milk (or clotted cream if your feeling naughty )

Fry shallots,Red Pepp& ginger 'till soft
While making a pan of scrambled egg
Mix all together and serve on warm fresh bread....yum

Scotch eggs
6-8 hard boiled eggs
1lb sausage meat
2 eggs whisked with a pinch of black pepper
Homemade breadcrumbs with garlic & herbs
(put bread 2 garlic cloves and a sprinkle of herbs of your choice in a processor and zap till... well breadcrumbs!)

Divide sausagemeat into equal amounts (use flour to stop it sticking.
mould sausagemeat around egg then dip completly into beaten egg and then roll in the breadcrumbs
Place on a baking tray and cook untill golden brown

Lemon mascarpone ice-cream with blue poppy seeds is one you need to try!
