personally i think it smells like mice ,some folk like it but in a comp i would go for nowt that a fair few folk dont like

Yes,cubed meat is better.
We have lots of homegrown dried chillies.

Smoked Chipotle Chillis and a couple of cubes of very dark chocolate are my personal favourites along with ground cumin and coriander, garlic and I add some mixed herbs

Yep, they pay me twelve grand a month.

I only use it in bolognese and chilli, but it does add a nice savoury depth. Just make sure you remove it before serving.

You need umami, so a smoky flavour is essential. Chipotle chillies do that. Sainsbury's sell little jars of chipotle mush, and other outlets sell similar bits for sillier prices. But, in the end, it's down to the judge. There is no definitive chilli recipe, just the one he or she likes. And that might be Vesta.

As for star anise, I'm afraid I whored myself out to powdered five-spice years ago; same effect, and no devil's talons to fish out.

Well here's mine, not sure if it's any good for a comp but I've always been told it's really nice.

One large onion.
4 cloves garlic.
4 bird eye chillis
1Lb mince beef.
Some mushrooms.
Tin tomato puree.
Tin chopped tomatoes.
Tin kidney beans.
Tin baked beans.
Oxo cube.
Salt and fresh ground black pepper.

Chop and fry the onion. After a few minutes add the chopped garlic and chillies (leave the seeds in if you like it hot). Fry for a few more minutes. Add mushrooms, fry for a few more minutes. Then add the minced beef but small amounts at a time, making sure it's browned off before adding any more. Once all the beef is done, add the tomato puree, stir in. Add chopped tomatoes, baked beans, kidney beans. Stir all in. Add Oxo cube, stir in, then salt and pepper. Leave to cook on a low heat for about 20 minutes, stirring occasional.

I always find it's better cooked the day before you want to eat it.

This recipe is really good.
Was very dubious about the honey,but it worked.
We didn`t have the correct chillies,so used one small hot home grown(unknown as BTL didn`t label them) plus 11/2 tsp hot chilli flakes.
Not a scorcher,but a lovely flavour.

sorry missed yesterday.
Try gently warming 10 fresh chopped chillies in 250 ml vegetable oil keep the oil below 75 degrees and simmer for ten minutes add 1 tablespoon of ground cumin 1 tablespoon of ground cinnamon 2 tablespoons of Worcester sauce 1 teaspoon smoked paprika stir and simmer for 5 minutes then add 3 finely chopped cloves of garlic turn off heat immediately after garlic is added allow to cool. Put into clean jar and allow to stand at room temperature for at least 1 month best results are at three months.
Beware this is an essence of chilli add small amounts to your fried onion tomato and meat mix until you reach desired flavour / heat.
I once gave a friend 50ml of this (that had been standing for 3 months) and told them it was enough for 20 litres of chilli they made 10 and no one could eat it too hot
