Interesting overall,but where they lined the existing cavity wall they have drasticly reduced the light through that window.

I can see that being air tight is good for thermal insulation, but what about moisture? The inside is brick, with presumably ordinary plaster, and people generate quite a lot of water. Does this sort of retrobuild allow moisture out?

The strawbale walls themselves are permeable and therefore allow that part of the building to breathe. Air tightness is a function all houses should strive to achieve with air circulation being controlled and heat recovered from out going air. Airtight doesn't mean sealed in this respect it, it simply means there should be no uncontrolled air flow.
