|
We have reached that time of year when almost anyone who keeps a few chickens is inundated with eggs. Yet when I go to look for an article on "what to do with a glut of eggs", the cupboard is bare.
This situation needs to be remedied!
I know there have been several recipe threads in the past, and we will use these as the basis for compiling an article or two. But if you have an as-yet unpublished egg recipe that you feel we should know about it, please add it to this thread. |

This is one I posted on Neil's site yonks ago, infinitely variable; good with asparagus, leeks etc, etc. We have it on Friday nights nowadays.
"1/2 onion sliced
2 or 3 cloves garlic peeled & sliced
1 bunch spinach finely chopped
4 eggs
Finely chopped chillis (or chilli powder to taste)
1/2 tsp garam masala
salt
finely chopped coriander (optional)
Sweat the onion & garlic in some oil until soft, add the spinach and cook quite hot until the moisture's evaporated, add the rest of the ingredients except the coriander which should be added just before the egg sets.
Nice with bread, chapatti or jacket potato (in fact we eat it with jackets every Tuesday when we have spinach in the garden)" |

Mum use to do a hot eggy bread thing:
Finely chop some chillis, coriander and onion, beat into some eggs, add a little salt and garam masala (optional). Dip your bread in it and fry. |

Or sweet eggy bread with maple syrup. Great when you're feeling sorry for yourself. |

Actually she used to do sweet scrambled eggs with toast for breakfast years an years ago, just scrambled eggs with added sugar, nice. |

Wild garlic and duck egg omelette:
Handful wild garlic leaves, washed and coarsely shredded.
2 or 3 duck eggs (depending on greed/size of your pan) beaten with S&P and a small splash of water.
Lump of butter.
Heat frying pan.
Chuck in butter, when foaming add ransoms and sweat for a minute.
Pour in eggs and make into an omelette. |

Tortilla
Chocolate mousse
Meringue (need something to do with the whites left over from mayo)
Egg fried rice |

I've been doing lots of Dorothy L Sayers mystery-novel-comfort-reading over the last few weeks and she talks about someone being poisoned by the Dastardly Murderer adding arsenic to a 'sweet omelette' along with the sugar. It sounds quite scary. |
