Ingredients


  • 2 good handfuls ramsons

  • 3-4 good handfuls young ground elder leaves

  • a scattering of pine nuts

  • 2 heaped dessert spoons

  • freshly grated parmesan

  • salt olive oil and black pepper




Recipe


  1. whizz the greens in a blender with a little olive oil.

  2. toast pine nuts til golden add to greens and

  3. whizz a bit more to incorporate the nuts.

  4. add the parmesan

  5. mix and season to taste.

  6. store in a clean jar in the fridge with a layer of olive oil to seal the greens

  7. add generously to fresh cooked rice or pasta.

  8. enjoy!




Comments

three cornered leek would probably work instead of Ramsons, ground elder can probably be substituted with sorrel for a lemony flavour. Haven\'t tried either of these!
