aka - Ixy's Keeps-You-Regular Cake

I was attempting to recreate my mum's friend's polish prune cake recipe yesterday....without having a recipe to work from. It didn't come out the same at all, but it worked! You need a 9inch square cake tin and you get 9 3inch square sticky gooey yummy slices:

170g self raising flour
80g sugar
40g honey
40g treacle
80g butter
1/2tsp baking powder
a splash milk
1 egg
1 300g tin of prunes in syrup

- Sift flour into bowl
- Add sugar, butter, treacle and honey
- Thoroughly rub the butter into the rest of the ingredients (back of a spoon on the side of the bowl works well)
- It'll be quite stiff, so add a splash of milk to make it a bit easier to stir
- mix in the egg
- strain the prunes and add the syrup to the mix
- take the pits out of the prunes (bit fiddly, sorry) and stir the flesh into the mix too
- stir in baking powder
- pour into tin
- bake until it seems done!

no gasmarks on the stove, needed a medium type of heat - not really ricking but not cold. I decided it was done when the top looked baked and it didn't slosh around when I tilted the tin and didn't give when prodded - it'll not be fluffy like a sponge as it's quite dense and sticky.

I like that sort of recipe Ixy, bake till it's done
And sounds like one my Dad would love.

When I lived at home, we both used to nick dried prunes from the food cupboard and when Mum used to ask who the culprit was, he'd say me, and I'd say him!

prunes are very underrated IMO - not just for the over 80s!

I like prunes too - especialy those posh stuffed French ones.

Another prune fan here, but that recipe sounds waaaay too sweet for my taste .

I,ll have try that, I love prunes but OH doesn,t,unless they are wrapped in bacon.

Prunes wrapped in bacon one of my favourite things about Christmas dinner!
