Hey i just made my first cheese!!

Simple stuff usng supermarket milk but very satisfying

I just warmed 4pts of milk in a big pan!
Added a bit of youghurt as a starter
waited half an hour and added drops of vegetarian rennet as directed on bottle!
Went to bed -
got up found curd nicely set
cut curds
heated a bit
dreained off in a bag for the day( put weight on over a colendar for last bit!!

separated into two

flavoured half with 2 cloves of galic - some chopped up parsley from garden and a few dried herbs (nice boursin style cheese)

left the other as a philadelphia style cream cheese!

Both are quite as tasty as any other cream cheese i ever had!

and quite satisfying to find the fact that i used pasturised homogenised milk and a yoghurt starter didn't really

I'm a bit of a busking make it up as you go cook - and nice to see my experimental approach can extend to cheese making! Will try a hard cheese soon!!

Excellent stuff!
Making cheese is definitely on my ToDo list. One day it will rise to the top of the list. I am really intrigued by the recipes for making mozarella in the microwave.

We've made simple cheese with milk and vegetarian rennet, very nice on a pizza. Does the yoghurt help give the cheese a bit more flavour and character? Will try that next.

gives it a little bit of acidity the same as a proper cheese starter - or using natural bacteria in unpasteurised milk - yoghurt also seems to give a nice flavour that goes well in a cream cheese if my effort ws anything to go by (easier to get than sending off for cheese starters too!!!!

where's a good place to buy the rennet from?

Some supermarkets sell it *but* do check the best before date as some places don't sell that much and the date is quite short. Suma also sell it so I expect some health food shops must do.

Watch out for 'Junket Rennet' which is flavoured with vanilla and not a good idea for cheese-making in my experience.

I have wanted to try cheese making for ages but OH wont let me as she thinks it will smell and she is not a fan of dairy stuff but i got the Ascott catalouge through today and she has seen the cheese making kit in there and said if i am a good boy santa might bring it for me!!!!

Good boys write articles on chilli jam and...other stuff chefs know about. We can do a very nice reference for Santa on recycled paper

My Vegeren is a year out of date and still working perfectly well. Bought at a huge reduction in a supermarket last year. I bought all 12 bottles on the shelf, still using it.

The dates always seem to be quite short but I have no idea what they mean on the vegi rennet. I assume it can't go off then, or by the sounds of it work less well. Good job as we have a few from Suma in the fridge.

i got my veggy rennet from supermarket - only when i got it home i noticed it was a couple of months past best by - stil worked fine though
