I had a hankering to make a risotto nero to go with my roasted sea bass for dinner. Bizarrely enough the teeming foodie metropolis that is Torrington doesn't have anyone who sells squid ink. So, for future reference, if I'm cleaning squid can I freeze the ink sacs for future use?

Not sure about freezing the sacks, but you could probably extract it then freeze.

As long as the sack is intact, if split do not leave it with the ink.
