Hi All
First post, so please be gentle.
A couple of years ago I made Elder gin, with remarkable success. I am now passing hedgerows full of elder flowers and wondering about elderflower wine/champagne. Any very easy recipes would be much appreciated. : |

I started some elderflower wine and cordial today using these recipes. used them last year too  |

Out of interest, a full carrier bag of elderflower heads will give you approx 2 pints of stripped elderflowers. |

Just sitting down with a beer (our lodger persuaded me with the line 'but theyr'e cold') having come from the kitchen where our apricot and elderflower jam is cooling.
Best jam in the world. Really. |

Roll the elderflower head in your palms, the flowers come right off. |

Oh, Jamanda, use the fruit for the gin, but let it "mature" for at least 1, preferably 2 - 3 years !! |

made some elderflower cordial using the leave for 5 days method with sugar and lemons now its fizzy. could it be fermenting. |
