Greenfoot came back from his family yesterday with a car full of goodies as usual but this time we have been given 6 dozen eggs. All recently laid - two questions:
How long will they keep?
Ideas for using or processing?

CURD - never really been a fan but we have just made some Lemon and some Strawberry and Orange, it is lovely. Going to try Lemon and Apple and just Orange next. I have been converted!. Doesn't keep for long but I believe it can be frozen in tarts etc. |

I've only ever made lemon curd- can you post a recipe for the strawb and orange?
cheesecakes use a few eggs- the recipe in the River Cottage Family cookbook is great. |

I'll dig the recipe out tomorrow, it will only keep for a couple of weeks due to the acidity but it tastes fantastic. The Lemon and Apple is supposed to be good as well as it has a 'fluffier' consistency, will be giving this a go this week as we have lots of eggs too. |

Last week I made a whole load of meringue nests (those not scoffed by DS-ers will keep really well in an airtight tin!) and made gooseberry and elderflower ice cream with the yolks...delish. |
