I tried Searching on DS, but couldn;t find the recipe for the sort of Elderflower 'champagne' that people make that is fizzy and not terribly alcoholic (unlike my own methode champenoise elderflower).
Where is it ? What's the recipe ?
Has anyone ever tried making it with other flowers ?
I'm thinking there has to be a quick way of using this year's abundant gorse flowers (without making wine wine). |

we used a recipe from River Cottage, it has LOTS of fizz (two bottles exploded last year, can still smell it under the stairs
I will try and dig it out for you, I think the alcohol is 2 - 4%. |

Thanks, Chez ! That's exactly what I wanted.
I expect it will need rather more gorse flowers, in the same way gorseflower wine needs about 4x more flowers than elderflower wine.
Anyone ever made this kind of drink in swing-top bottles (like Grolsch) ? Would that be OK instead of plastic ? When the CO2 has filled the airspace, the yeasts should stop working.
(Like champagne bottling, too) |

I always put my elderflower champagne in glass swing top bottles, never ever plastic. Been fine for 25 years |

my favoured floral tipple is a strong cider strength elderflower - i use a fair bit of grape concentrate juice or raisin (or, if i freeze the flowers and wait, apples from my trees). Cos its around at the same time sometimes i use rhubarb (prepared as for rhubarb wine but lighter)
I find it is more refreshing than full wine strength elderflower wine - but more interesting than elderflowe cordial or the low alc elderflower champagne. You can quaff it without getting p*ssed like with wine - but it stil got a kick and you can make it more dry!
But play with the amount of sugar and ingredients , use a hydrometer , and you'll find what you like. I've been doing this stuff on and off now for around 45 years so you learn what works for you if you experiment! |

Oooh that looks very good. I've only ever made elderflower cordial but I think I might try this. Presumably I need small bottles not 2 litre ones? What do you think? |
