Right, I can make beer from kits reasonably successfully and consistently. I don't really want to go down the full mash route at the moment. I was wondering if some of the more experienced beer makers (Gil, Treacodactyl, James, anybody else???) could cobble together an article on stuff like customising kit beer, using your own recipes starting from malt extract, that sort of stuff. Please, pretty please.

I don't mind helping out and can take some pics next time I put on a batch but I'm more of a beginner really.

I suppose you want to cover types of malt extract, crystal malt and other grains, other sugars, types of hops, types of yeast, brewing techniques, bottling etc?

In which case, I'll write a section about messing around with putting extras in your beer kit, and tweaking the instructions.

I know it's not technically "beer," but I've been cranking out some amazing, and foolproof, ginger beer. It runs about 10-11% alcohol, so has quite a kick. In fact, it kinda sneaks up on you. It's enormously refreshing on a hot day, and that's its danger: you can easily down a litre or three and end up shickered - as I found out again a few weeks ago.
Ginger is easy to grow, although it needs protection if you are in a frosty environment.
If you're interested, I can post the recipe.
